This is my go-to method of cooking sweet potatoes. They turn out sweeter if baked in the oven, but they are more moist when cooked in the instant pot. I often cook several of similar sizes at one time and put them in the refrigerator until I'm ready to use them. Doing this reduces the starch a bit and makes them a tad healthier.
- Wash AND PIERCE 1 to 6 Sweet Potatoes
- Use steamer basket or trivet
- 1 cup water
- Manual on High
- Cook time varies by size of individual potatoes - 15 to 60 minutes:
- small - 15 to 18 min
- medium - 22 to 30 minutes
- large - 27 to 35 minutes
- gi-normous - 60 minutes
